: Compounds dissolve in a specific order: first acids, then sugars, and finally heavier, bitter molecules. Understanding this timeline allows brewers to stop the process before over-extraction introduces unpleasant bitterness. One of the most important concepts is that the coffee bed itself acts as a primary filter. Barista Magazine Online Pore Structure : As water flows, it creates a porous medium. Fine Migration
: The flow rate of water through the coffee bed is governed by Darcy’s Law , which states that flow is proportional to the pressure gradient and the permeability of the coffee bed. the physics of filter coffee pdf full
Darcy’s Law describes the flow of a fluid through a porous medium. It is expressed as:
Temperature is a primary driver of kinetic energy at the molecular level. It directly dictates the rate of solubility and diffusion. Temperature-Dependent Solubility : Compounds dissolve in a specific order: first
In filter coffee, gravity or a slight pressure gradient drives water down through a bed of compressed coffee grounds. The coffee bed acts as a porous medium. This behavior is mathematically modeled using , which describes the flow of a fluid through a porous material:

A critical failure mode is —water carving preferential paths through the bed, bypassing large regions of grounds. This results in uneven extraction: some grounds over-extract (bitter), others under-extract (sour). Physics explains this via the Rayleigh-Taylor instability: if the local flow resistance varies, water seeks the path of least resistance. Pouring technique (circular, even saturation) and a flat bed surface prevent channeling.
As the brew saturates, the concentration gradient diminishes. Without flow, extraction stops at equilibrium (limited solubility). In percolation, fresh water constantly renews the gradient, maintaining a high mass transfer coefficient. This is why pulse pouring (multiple small water additions) yields higher extraction than a single pour—it disrupts the stagnant boundary layer around particles.
Use a grinder with a more uniform particle size distribution; minimize aggressive pouring. Fluid channeling through the porous medium

Caution white G1 owners: Cupcake kills DarkKeys, so the physical keyboard is once again almost impossible to see in moderate lighting conditions. 🙁
How can I receive the cupcake update sooner? I haven't gotten it still and have had the phone since the day after after its release. And I've been waiting on it since like decemberrrr.
Thanks

Hi Derek,
I wouldn't recommend you download the devphone firmware since it warns that it may miss some features for "proper" localised phones. The page I used is here: http://www.htc.com/www/support/android/adp.html , but I repeat, you should probably not do this. I think the upgrade is starting to be distributed by most operators about now.
